Wild Thing! Ancient wild vines and minimal intervention make for an offbeat, extraordinary wine that might well trigger gasps and pearl-clutching from the stuffier crowd. So wonderfully unruly that "unconventional" sounds almost too rigid to describe it. Made from grapes harvested from vines which grow so high that ladders up to five meters tall are required, this wine certainly possesses “organic” and “sustainable” credentials; however, what stands out is the utterly new drinking experience it offers. Salty, earthy, and full of citrusy freshness, with notes of ripe grapefruit and some fine tannins. This kind of wild would make any Spanish bull seem like an overfed housepet. Unfiltered.
Pairings: White meat, vegetables and aged cheeses (tip: with a little fleur de sel the flavors will improve even more).
Storage potential: 3-4 years (can be significantly longer under ideal conditions)
