In our experience, white wine and wood maturation can be a heated balancing act, a tightrope walk with no landing pad. It is far too easy to lose balance, which has a ruinous effect on the end product.. Too often, the encounter between wine and wood appears to have gone less than harmoniously, resulting in wooded wines which seem, so to speak, to have been beaten to death by the oak, or to have lost their vital acidity. Jimena Egaña, however, Oenologist of the Year 2019 in Chile, masters this tightrope walk with flying colours. Exotic fruit wrapped gently in vanilla, caramel and delicate toasted aromas. The fruit sets the pace, consistently underpinned by a refreshing acidity which invites you to another glass. The classic woody notes stay politely in the background, but are still present.
Pairings: Fish dishes à la Française, tuna carpaccio, foods with cream-based sauces, vegetarian dishes
